Thai Glazed Mahi-Mahi

Lite Goodies last recipe of 2013 is something I really love: fish. This Thai Glazed Mahi-Mahi Recipe contains the perfect combination of sweet and savory, the dish is beautiful and easy to prepare. If you prefer, you can substitute the mahi-mahi with other white fish, as cod or hake fish.

If your New Year’s resolution is eating healthier, this is a great way to start! Grab a paper and a pen and let’s cook:

Serve 4

Thai Glazed Mahi-Mahi Recipe – Ingredients:

3 tablespoons brown sugar
1/2 cup soy sauce
1 teaspoon ginger powder
1 teaspoon tamarind paste
4 mahi-mahi fillets
2 tablespoons rice vinegar
2 tablespoons sesame seeds for garnishing

Start preparing the marinate: in a small bowl stir together brown sugar, soy sauce, ginger powder, rice vinegar and tamarind paste. Place the mahi-mahi fillets in a ziplock (or in a container with lid) and add the marinate. Refrigerate for 20-30 minutes.

Separate the fillets from the marinate. In a small sauce, pan cook  the marinate over medium heat, whisking occasionally,  until the mixture is thickened and reduces to a glaze consistence.

While you cook the marinate you will fry the fillets. Grease a large skillet with cooking spray. Over medium-high heat, fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork.

When the fish is cooked, spoon glaze over it and garnish it with sesame seeds.
