Last weekend I was totally in a baking mood … so I decided to cook this amazing Fat-free Blueberry Oat Bran Cake Recipe. Yes, you read it right: it is fat-free! The recipe is from a Brazilian blog wrote by a 12 years old girl (here). It is super healthy! To prepare you don’t need to use any fat or flour and you can add the fruits you prefer. This version I made with blueberries … it was delicious. Also, it is a great snack idea for kids.
Fat-free Blueberry Oat Bran Cake Recipe– Ingredients:
– 2 1/2 cups oat bran
– 9 oz fat-free/ lactose-free plain yogurt
– 1 1/2 cups light brown sugar
– 3 eggs, separated
– 1 tablespoon baking powder
– 1 teaspoon cinnamon
– 1 teaspoon vanilla extract
– 1 cup fresh blueberries (you can use bananas, strawberries, raisins .. etc)
Fat-free Blueberry Oat Bran Cake Recipe – How to prepare:
Whip the egg whites until they are stiff. Set aside. Sift the dry ingredients (oat bran, baking powder and cinnamon) together in a bowl. Set aside. Whip the yogurt and brown sugar until creamy. Combine the egg yolks and vanilla extract. Gradually add the dry ingredients to the mixture. Mix in the blueberries and the beaten egg whites. Bake in a preheated 350 degree oven for 30 minutes. When the cake is done, a tester will come out clean.
You can bake it in muffin pans or in a cake pan (maybe it’s gonna need more or less time in the oven). To serve, top it with blueberries . It is beautiful and delicious :).
