If you want to have healthy eating habits, an important point is preparing attractive food. Why light/healthy meals should to be boring? Of course you don’t need to cook “chef-prepared-gourmet-meals” all the time, but sometimes it worth putting efforts on the food presentation.

Quinoa-Stuffed Apple Recipe – Ingredients:
1/3 cup smoked turkey breast, cut in 1/2-inch pieces
1/2 cup cooked quinoa
2 tablespoons ricotta cheese
1/4 cup sliced almonds
Quinoa-Stuffed Apple Recipe – How to prepare:
Place the cooked quinoa in a bowl. Stir in smoked turkey breast and ricotta cheese. Set aside. Slice off the top quarter of each apple. Use the lemon to rub the cut sides of each apple (as well as the cut slices), to help prevent browning. Set aside in a paper towel to dry. Use a knife and a spoon to carefully carve out the inside of the apple. Back to the quinoa mixture, add salt and pepper to taste and combine the almonds; mix well. Place the apples on serving dishes, fill each with about 1/2 cup of quinoa mixture and cap with the apple tops. Serve immediately.
